Cauliflower Tomato Koora

Description

Cauliflower Curry Koora means curry in telugu, typical Andhra meals are served with any veg or non-veg variety of Koora.
Ingredients
2 cup Cauliflower (cut into florets )
1 no Onion (finely chopped)
3 nos Ripe tomatoes (crushed or pureed)
1 no Green chilli (minced)
¼ inch Ginger (crushed)
3 clove Garlic (crushed)
¼ tsp Mustard
¼ tsp Cumin seeds
¼ tsp Split black gram
¼ tsp Bengal gram
3 nos Curry leaves
2 tsp Red chilli powder
½ tsp Corrainder /dhania powder
¼ tsp Turmeric powder
½ tsp Salt (or to taste)
2 tbsp Oil

Instructions

Wash and trim cauliflower into small florets and keep aside. Heat oil in a medium or shallow pan and toast mustard, cumin , split black gram, bengal gram and curry leaves ; saute finely chopped onions and green chilli with crushed ginger and garlic until slightly brown ; cook crushed tomatoes along with turmeric powder, red chilli powder and dhania powder. Now add cauliflower florets with salt and cook until slightly tender and garnish with corrainder leaves.
