| 1 tsp | Salt |
| 2 clove | Garlic |
| 1 tsp | Chilli podwer |
| 1 tsp | Turmeric powder |
| 1 tsp | Cummin seeds |
| 1 cup | Grated coconut |
| 1 tsp | Mustard seeds |
| 1 stks | Curry leaves |
| 3 tsp | Coconut oil |
Instructions
Cut the vegetables so that they are all of even size – of about 2 inches long.
Boil water and cook the vegetables with salt.
Meanwhile, grind the grated coconut with chilli powder, turmeric powder, garlic and cummin seeds with 2 tsp of water, coarsely for about 8-10 secs just enough to blend the contents.
When the vegetables are almost cooked, add the grinded coconut masala and mix well. Cook for 5 more minutes under low flame.
Splutter mustard seeds in coconut oil. Add curry leaves. Add this seasoning to the cooked vegetables.
Delicious Avial is ready.
Notes
Drumstick, raw banana, and mango are a must. Otherwise choice of vegetables is upto your personal taste. Yam, cucumber, pumpkin, ladies finger can also be used.
Apply oil on your palm and fingers before slicing raw bananas to avoid your palm becoming sticky.
