Description

Basundhi

This is my own version of basundhi. Give it a try and let me know if you liked it. It turned out very delicious for me.Hope you like it too.

Ingredients
1 quart Heavy whipping cream
1 can Evaporated milk
1 cup Sugar
6 slice Bread
3 strands Saffron (a pinch)
1 cup Coarsely ground nuts(cashew,almonds,pista)

Instructions

Take a heavy bottomed pan.

Add the heavy whipping cream and the evaporated milk to the pan

Remove the crust from the bread slices and cut the bread slices into small squares

when the milk comes to a boil add the bread and keep on medium flame

let the bread cook well and it needs to literally get mashed up.It shouldnt look like bread has been added.

At that stage add the sugar

keep mixing once in a while to avoid sticking at the bottom.

Since we have added heavy whipping cream and evaporated milk the mixture will thicken quickly. Add the saffrom strands and let it cook till the thickness of condensed milk is achieved.

Add the coarsely ground nuts

Remove from stove and cool it.

Put it in the freezer for a couple of hours. Do not let it freeze.Just the thickness will be achieved quickly by putting in the freezer.

Then shift it to the refrigerator.

Serve cold.

The quantity is adequate to serve 10 people.

    I tried today but it taste like bread basunthi.. Just i add very little bread. It doesnt taste like restaurant basunthi .. Can u help me to get ..

    where to buy heavy whipping cream and evaporated milk it is not same of ordinary milk packets

    Your Basundhi is definitely innovative. I made this with evaporated skim milk and the outcome was really good.

    Can you please tell approximately how long you simmered the milk mixture before and after adding the sugar? Just to get an idea. Would really like to try it.

    Hi roshu,

    I made Basundhi today and it is so so good. It is my Hubby’s bday on monday and i am making it as a surprise sweet for him since he loves sweets. In the meantime my kids and tasting and they love it. Thanks a lot for this sweet dish.

    Plz Let me know whether heavy whipping cream is the same one which we use for gravies and also about evaporated milk.

      Heavy whipping cream is different from the fresh cream we use for gravies. We can get it in grocery stores. Also evaporated milk is different.It comes in a small tin.
