Red Bell Pepper Soup

Description

Mild Roasted Red Bell Pepper Soup, low fat version, a hearty warm bowl of soup for your lunch box on a cold day with any kind of hard bread roll.

Lunch Box Idea 2 / Thermos preferred / Microwave / Kids / Adults / Mild Soup / Capsicum / Red Pepper

Ingredients
1 no Red bell pepper
1 no Onion
2 clove Garlic
2 cup Stock (chicken or vegetable)
½ tsp Black pepper powder
½ tsp Salt (or to taste)
1 tbsp Olive oil

Instructions

Heat oil in a pan, fry the chopped onions and minced garlic along with chopped red bell pepper for 4 minutes over medium flame. Fry till the onion turns translucent and the pepper browned lightly. Now add the chicken / vegetable stock of your choice along with salt and let simmer for 5 minutes. Swtich off and let cool. Now using your blender or processor puree the content and add pepper powder and simmer again for few minutes. Choose a garnish of your choice either parsly or coriander and serve.

For lunch box preaparation: Would suggest you buy a small thermos9link provide below) or you have to choose warming in a microwave. Once the soup is simmered immediately pour in your thermos, close with lid tightly and pack with a small hard variety bread roll (Italian / Sour dough / Soup sticks / French Bagutte) for dipping.

Notes

Make it Veg or Non veg style picking the approriate stock, make it rich by roasting it in butter, garnish with little cream, throw in some cooked beans or shredded chicken to make it really filling.

Chicken Stock  – Store bought chicken stock or consomme or cubes will work. I prefer fresh homemade stock. For basic chicken stock, heat up 3 cups of water with  cubed onions(1), carrots(1), beans(3), celery(1), few cloves, minced ginger(1″), crushed garlic(2), Chicken parts(bones, neck, legs, thighs and some meat), peppercorns and salt. Pressure cook upto 3 whistles, let the steam release, filter the stock, cool and refrigerate. Ignore chicken and use the rest for vegetable stock.

Yield: 1 adult serving.

      Cap, just little onion, carrot, cumin and black pepper with water will make instant soup base. Making without the stock will not taste good, resulting in almost like a thin chutney. My advice.. use some kind of stock or use soup base or cubes.

    wow it looks yummy and inviting. Mullai can you tell me what brand should i use for the chicken stock. I am in US(California).

      Anusha, I prefer homemade stock, recipe is updated with one, check it out. You can even make simple stock with just chicken, carrots, onion and black peppercorns.. rest are not a must. Try and let me know. Thanks.
