Bisi bhela Bhath

Description

Saturday being all veg day, wanted something spicy and comforting. So asked amma to make sambar rice (bisi bhela bhath). Few of my dad’s relatives in Bangalore use whole garam masala whereas my mom doesn’t use it.

Ingredients-1
2 cup Rice
1 cup Tur dhal(boiled with a pinch of turmeric and asafoetida and mashed well)
1 cup Sambar onions
4 nos Tomatoes (chopped)
Chopped vegetables – 2 carrots, 1 chow chow, handful of beans, 4 brinjals.
2 nos Drumstick (boiled and the pulp extracted)
7 nos Green chillies slit lengthwise
Ingredients-2
1 tsp Mustard seeds
3 nos Red chillies
1 tsp Cumin seeds
3 stks Curry leaves
Ingredients-3
2 tsp Channa dhal(kadalai paruppu)
10 nos Red chillies
3 tbsp Dry coconut /coprai thengai
2 tsp Dhania
Fry the above in little oil and grind to a coarse powder

Instructions

Take a heavy bottom vessel or a pressure cooker and heat oil. add the items to temper. Now add the sambar onions, green chillies and tomato and fry till tomato is soft. Add the cut vegetables and fry for a while till the raw smell goes followed by the drumstick pulp. Finally add in the soaked rice, boiled and mashed tuvar dhal and the masala powder and mix well and check for salt. Add in enough water (1 : 4 rations is also ok as we need it real mushy)  and close the cooker lid and wait for 3 whistles.

Garnish with cashews fried in ghee and chopped coriander. Serve hot with appalam, chips or tomato thokku.

I love bisi bhela bhath, but one or two hours after preparing, it becomes very dry. What to do??

Yea Shankar, it does get thick once it cools down. You can reheat it with a glass or 2 of water to make it mushy again.

another tip is , the bhath should be really watery when you remove it from the stove, so that it reaches that mushy texture once it cools down.

the ones you get at restuarants are so sinfully perfect because they use a lot of ghee and dalda which isn't that healthy
