Have you ever craved for spicy crisp puffs hot from a bakery round the corner on a chill rainy day?? Well, here’s one who’s typing this post… and who use to enjoy these quite often during school days and now making it for her kids…..Puffs any form is quite attractive and additive and my favorite or our family favorite is spicy chicken puffs, though we get see a lot of veg puffs… chicken or egg is quite rare and you get to see them only in few kerala style bakeries. Here in US i have never seen one and decide to make my own, using store bought puff pastry. It is very easy to make and stays good for couple of days too.
Puffs are crispy pastry item baked with a stuffing of your choice. This recipe is made with chicken stuffing. They are perfect for an eve snack/ after school snack or even as an appetizer for parties and get-together!| Ingredients | |

| 1 pack | Pastry sheet |
| 1/2 cup | Chicken (minced) |
| 1 cup | Onion (finely chopped) |
| 1 teaspoon | Ginger garlic (minced) |
| 2 teaspoons | Carrots (shredded) |
| 1/4 teaspoon | Turmeric powder |
| 1/2 teaspoon | Red chilli powder |
| 3 pinch | Carom seeds powder (ajwain) |
| 1/4 teaspoon | Black pepper powder |
| 1/4 teaspoon | Garam masala powder |
| 1 teaspoon | Coriander and curry leaves (chopped) |
| 1/2 teaspoon | Salt (or to taste) |
| 2 teaspoons | Oil |
| 1/2 teaspoon | Cumin seeds |
Where can you find this Puff Pastry Sheets?? Walmart, Meijer, Kroger and even some Indian grocery stores carry under refrigerator isle. Each pack has two sheets and one sheet can make 4 large puffs or 9 mini puffs. The stuffing can be made ahead of time and it can baked in oven in 20 minutes. You can even make the puff ahead of time and warm in oven just before serving. (Do not warm them in microwave, it could make them soggy)
Thaw the refrigerated pastry sheet as per package instruction which usually 30 to 45 minutes. Meanwhile the stuffing can be prepared. (if making veg version just skip the chicken substitute with boiled potatoes or any mixed veg of your choice) Heat oil in a pan add cumin seeds, chopped onions, ginger garlic and shredded carrots and fry for a while. Then add minced chicken with turmeric powder, chilli powder, ajwain powder, black pepper powder garam masala powder and salt. Fry them till the mixture turns dry and garnish with chopped coriander and curry leaves. Let it cool completely.
Roll the pastry sheet on a flat surface and cut into 4 portions. Keep 2 teaspoons of the filling and fold diagonally and seal with water. Place them on a baking sheet and bake in middle rack of your oven according to package instruction (400 F for 20 minutes) until they look fluffy and golden on the outside. (Brushing them with little egg wash can give a golden brown crust but optional)
Notes
Each packet has two pastry sheets and would yield 8 big puffs. If desired the pastry sheet can be rolled out little thin, by dusting some flour. In that case it would yield more but smaller ones.
Make it vegetarian by skipping chicken and substitute with choice of mixed vegetables.
Brushing the top with little egg wash (egg beaten with little water) before baking can yield golden brown crust on top.
Boiled egg can cut into pieces and can be stuffed in between the mixture.
