I happened to try this recipe not out of curiousness; but accidently. Yes, it started with the left out sugar syrup prepared for making Badusha. I didn't want to waste it, so I tried with the readily available besan flour!

1½ cup | Basan flour |
1 cup | Sugar |
1 cup | Water |
1 cup | Ghee |
5 strands | Saffron (optional) |
1 pinch | Food colour |
2 nos | Cardamom crushed |
Cashew nuts |
Instructions
Fry besan flour (kadalai maavu) with a tbsp of ghee in a nonstick pan till the raw smell vanishes. Boil sugar with water till thin thread cosistency. Add food color to it. Now add the syrup to the flour. Start adding ghee little by little and stir continously. Now the paste will not stick to the pan. Add cardamom and saffron and stir for another 5-6 mins.
Grease a plate with ghee beforehand or may use butter paper. Pour the paste in the plate. Divide into desired shapes and place the cashew nuts before the recipe dries up. Voila! Besan burfi is ready.
