Chilly Parotta

Description

I love the Chilly Parotta[vegetarian dish] served at Sangeetha hotel in chennai.Its also called as   Kothu Parotta[Non veg dish] .Never thought that i would make this kind of a parotta at home. I tried making them with the frozen parottas available here and it came out really very well.I made an attempt with a few veggies and instead of green chillies i ve used chilly powder..This recipe is a mix of Chilly and Kothu parotta..[:P]…Vegetarians can avoid eggs and follow the rest.
Ingredients
3 nos Eggs[optional vegetarians can skip this]
½ tsp Pepper powder
Salt as per taste
pinch Turmeric powder
3 nos Cooked parotta [cut as shown in the picture]
1 no Medium onion (finely chopped)
1 no Capsicum [chopped]
½ no Carrot (cut lengthwise)
1 T Ginger garlic paste
Corriander leaves for garnishing.
Few fennel seeds
1 tsp Garam masala powder
1 T Chilly powder (as per individual’s preference)
1 tsp Cumin seed powder

Instructions

1.Take a bowl add salt ,pepper and 3 eggs and beat well. Now take a pan and add oil and pour the eggs and scramble it well. Once when it is ready take it out in a bowl and keep it aside.

2.Make parottas [u can make fresh parottas pls refer http://www.spiceindiaonline.com/parotta], i ve used frozen parottas. now cut the parottas like this[refer pic] and keep it aside.

3.Take a pan add oil, and few fennel seeds, onion and saute well, now add ginger garlic paste  and saute untill the raw smell disappears.

4. Now add the capsicum and carrot and saute well , add garam masala, chilly powder, cumin seed powder and salt and add tthe cut parottas and mix well.

5. leave it on sim for about 10 minutes till u find the parottas a bit crispy. Now add the scrambled eggs and mix well and leave on stove for another 5 minutes

Garnish with corriander leaves.

Chilly Parotta is ready to be relished now.

Notes

I’vent used green chillies coz of the fear that it will get mixed with capsicum and we wud not be able to find the difference….that y i ve used red chilly powder.

Onion Raitha is the best side dish for this recipe.
