Description

1

This recipe courtesy is my colleague T who is from thirunelveli. She used to bring this for lunch and it was treated as a delicacy by us.

Ingredients
1 no Eggplant(the big variety)
2 T Red chilli powder
1 T Coriander powder
1 tsp Turmeric powder
1 tbsp Rasam powder
1 tbsp Ginger garlic paste
Salt to taste
Oil

Instructions

Cut the brinjal into round slices(not too thin nor too thick) and make slashes in the middle. Mix the powders, gingergarlic paste with little water and salt into a smooth paste. Apply this paste on the slices and let them marinate for an hour.

Heat little oil in a tava or pan and fry the slices. Serve hot with sauce or even curd rice.

Hi, I used Rasam powder becos it gives a little punch to the dish…..as it has pepper, cumin, red chillies, dhals etc already in it..:))
