| Coconut paste made from 1/4 cup grated coconut |
Instructions
1.Pressure Cook Dhal with garlic ,asafoetida and a pinch of turmeric powder.
2.Grind the grated coconut with cummin seeds and curry leaves.make it into a fine paste with little water.
3.Take a heavy bottom pan or a nonstick pan.Heat oil and spluter mustard seeds.Now add the fenugreek seeds and split open chillies.When they sizzle add the chopped vegetables(carrott,green beans,potatoes,brinjal,drumstick).fry them in the oil till they are half cooked.
4.Add sambar powder to he vegetables and saute.When the veggies are coated well with the masala add tamirind juice and bring to a boil.Now add the cooked dhal,rice and coconut paste.Add salt and four cups of water.bring the mixture to a boil and simmer.
5.let the rice cook to a soft texture.keep stirring the rice now and then.check for salt and water.if the mixture gets too thick add half a cup of hot water and stirr the mixture.the entire dish should be soft and in a loose consistency(kuzha,kuzha). add a generous bunch of chopped coriander leaves.when done remove ans serve immediately.
