Crispy Okra Fry | Kurkuri Bhindi | Air Fryer Okra an easy and simple ladies finger fry recipe made with okra. Its a spicy snack made by coating tender okra with chickpea flour and spices. Typically this north Indian snack is deep fried but today we will keep it healthy by air frying!

What is Kurkuri Bhindi ?

 In hindi “kurkuri” means crispy and bhindi refers to okra, crispy okra fries are referred as Kurkuri Bhindi. Fresh tender okra strips are coated with a spicy mix of chickpea flour / besan, rice flour, chili powder & garam masala and then either deep fried or baked in oven / Air fryer.  I have already shared the deep fried version of Kurkuri Bhindi and also a microwave version of Okra Chips

This crispy, crunchy okra chips can be enjoyed as a snack with a cup of tea or can be had as a side for rice and dal. This air fried version is very easy to make and also is healthy. Now we can enjoy this snack guilt free!

Ingredients

  • 20 each Okra
  • 2 tbsp Oil ***read notes
  • 1/2 tsp Salt
  • 1/4 tsp Turmeric powder
  • 1 tsp Red Chili powder
  • 2 tbsp Gram flour / Besan
  • 1 tsp Rice flour
  • 1/4 tsp Garam masala powder use chaat masala for tangy flavor
  • 1/2 tsp Water

Instructions

  • Wash and air dry okra until all trace of water is removed.
  • Cut them into thin strips and set aside in a bowl.
  • Now add turmeric powder, red chili powder, 1 tablespoon of the gram flour, rice flour, garam masala powder, salt, oil & water.
  • Mix well to coat and set it aside for few minutes to make the okra absorb the flavors.
  • Now add the remaining one tablespoon of gram flour and toss well to coat. This will help to absorb any excess water from the okra and will keep it dry.
  • Preheat air fryer to 350F for 5 minutes.
  • Place the coated okra strips in the air fryer basket.
  • We need to bake for a total of 10 minutes.
  • After first 5 minutes, gently slide out the basket and give the okra strips light toss or shake. Then put it back and bake for another 5 minutes.
  • Once done, let cool for few seconds and enjoy!
  • Enjoy as a snack or serve it as a side for dal rice!

Notes

Oil ?  you may use less oil but the okra will become too hard and will also have a very dry feel while eating. It will be crunchy but too dry, using 2 tablespoon oil will keep it crispy and also will match the taste of deep fried okra!
Garam Masala or Chaat Masala ? Some like to add garam masala which is kind of neutral taste wise while Chaat Masala is very tangy as it includes dry mango powder and citric acid. Choose the one that you prefer!
