Soda bread is a quick bread that is often made with four basic ingredients: flour, baking soda, salt and buttermilk. Other ingredients like eggs, sugar, butter are often added to enhance the flavor of the bread.
With yeast being very hard to find these days and still wanna enjoy baking, then here is one solution which uses baking soda instead of yeast to make quick bread which is rustic..kind of crisp with chewy crust. Though dense this bread actually looks aerated & soft on the inside.

Ingredients
- 2 cups All purpose flour unbleached
- 0.75 teaspoon Baking soda
- 0.75 teaspoon Salt
- 1.25 cup Buttermilk

How to make quick buttermilk
- For one cup buttermilk- mix 3/4 cup thick plain yogurt with 1/4 cup Milk.
How to assemble & bake
- Preheat the oven to 400° F.
- This bread dough doesn't need to rise and goes right away into the oven. Line a baking tray with parchment paper and keep it ready.
- Mix the flours in a large wide bowl, add the salt and sieved baking soda.
- Make a well in the center and pour in all the buttermilk. Stir in a circular movement from the center to the outside of the bowl in ever increasing concentric circles. You may require extra water or buttermilk depending on the type of flour used. Within few seconds it will roll up to a thick sticky dough.
- Sprinkle a little flour on the worktop. Turn the dough out onto the floured worktop, gather & gently knead to make a soft dough.
- Place the dough ball on the baking tray. Make a 1" deep cross on top.
- Bake at 400 F placing in the middle rack for the first 15 minutes.
- Bring the temperature to 350 F and bake for another 10 to 15 minutes or until the top is golden brown.
- Cool for atleast 30 minutes and then slice and serve with herb butter.
