Mullu Murukku

Description

A hot savoury from Tamilnadu, made with combination of lentil flours and deep fried. (Rice chakli / Janthikalu / Murukkulu )

Ingredients
1 cup Rice flour
1 cup Split roasted gram flour
1 cup Gram flour (besan)
2 tsp Dalda(vanaspathi)
2 tsp Black sesame seeds
1½ tsp Red chilli powder
1¼ tsp Salt
3 pinch Baking soda
5 cup Oil (for deep frying)
1½ cup Water (approx)

Instructions

Mix soda and vanaspathi to make a frothy paste, to this add split roasted gram flour, rice flour, gram flour, salt, sesame seeds, red chilli powder along with water.

Mix them thoroughly to form a smooth dough. It might be little sticky, apply some oil or butter to your palms to avoid that.

Use a Murukku achu which looks star shaped to make this kind. Press the dough in hot oil and deep fry them in batches until golden. Drain excess oil , let cool and then store in an air-tight container.

Notes

Split roasted gram flour  also known as Daliya flour, Pottukadalai maavu, Fried gram flour– Available in all Indian grocery stores. If you don’t find flour, buy regular split roasted gram and grind them to a fine powder.

Murukku achu is a must of this variety, but if you don’t have one, try using cake decorating pastry bags which comes with a star nozzle. Zip-lock does not help here.Cry

      Bakya, it should yield about a dozen approximately.

    hi mullai,
    i tried ur recipe today, but i use 1 cup of water to form a dough.it came out reallllly well very crispy and tasty.

    can v use urad flour v get readily in the indian store for this recipe r did u grind it all by urself.

      Lakshmi, Urad flour is for the thenkuzhal murukku, which I make at home. Bcos you just need a couple of tbsp. Its very simple, dry roast urad dal until its light brown and grind into a fine powder. If you make more just store in an air-tight container.  Same way I grind dhalia (Pottukadalai) at home too. Its up to you, store bought is also fine.

    hi, i am trying out ur recipe…but it is breaking in the oil.turns in powder…what do u think is the reason? what shudi do? cud u pls let me know isntantly…thanks

      May be you have added more baking soda or vanaspati, which tends to make it too soft and melts in the oil.  Try adding some more rice flour and gram flour, sprinkle little salt and try a small batch. Do not add any water.
