Seafood is one of my top pick for any day of the week. Especially fish of any kind definitely twice a week… Though puttu with fish is very common in Tamil Nadu and Kerala… Shark hash / Shark puttu / Sura puttu is most popular among them….this is one fish which I miss a lot here in US, use to enjoy them often back home… amma gets these fresh paal sura/ baby shark from local fish mongers, makes this spicy fish puttu which taste out of this world with simple sambar or rasam sadam. Though this recipe suits for most of the fatty fishes like salmon, king fish, tilapia, tuna… I’ve always liked sura and this year I get to enjoy some of it during my stay in Chennai, India…. Straight from my amma’s kitchen comes spicy sura puttu recipe…

 Ingredients
 Baby Shark / Paal Sura / Fatty Fish  500 grams (about 4 to 5 thick chunks)
 Onion  1 cup chopped
 Garlic  6 cloves (lightly crushed)
 Green Chilli  2 long (slit open)
 Turmeric powder  1/2 teaspoon
 Red chili powder  1/2 teaspoon
 Coriander powder  1 teaspoon
 Salt  3/4 teaspoon (or to taste)
 Mustard seeds  1/4 teaspoon
 Cumin seeds  1/2 teaspoon
 Fennel seeds  3/4 teaspoon
 Curry leaves  10 leaves
 Oil  2 tablespoons
 Fresh Grated coconut  1/4 cup
Ingredients for cooking and cleaning the shark
 Water  2 cups
 Turmeric powder  1/4 teaspoon
 Salt (preferably rock salt / kallu uppu)  1/4 teaspoons

Clean fish thoroughly using little turmeric and rock salt.

Boil in water with remaining salt and turmeric from table-2 (About 5 minutes over medium flame) Switch off and drain all the water and keep the fish pieces aside to cool a bit. Discard the bones and lightly mash and scramble the flesh.

Add turmeric powder, chili powder, coriander powder and salt to the shark hash.

Now scramble again by mixing all the powder with it and keep aside.

Heat oil in a kadai, temper with mustard seeds, cumin, fennel seeds and curry leaves. Add in chopped garlic, onion and slit open green chili. Fry them till lightly browned.

Add in the prepared shark hash to the onion mixture and saute for few minutes.

Once the hash blends well with the onion mixture, it will slightly try to stick to the sides of the pan as it gets dry. Add in grated coconut and give a quick stir.

Switch off and garnish with few fresh curry leaves. Serve hot as a side for samabr or rasam sadam..

Notes
  • Serves 3-4 adults
  • Avoid buying mature shark, it will be too strong.
  • Paal Sura or Baby Shark is rarely seen in US but are available fresh in most coastal areas in India, do try this dish with that variety of fish.
  • You may also use other fatty fish if you don’t find shark. Try the same recipe with Salmon, Seer, Tilapia, Tuna, Halibut..even Shrimp will work.
  • Any Shark fish is usually very strong in smell, washing them with little rock salt and turmeric powder will get rid of them.
