Kesari is a simple easy sweet dish made during any festive or auspicious occasions. Normally its made with semolina / wheat rava but it can also be made with flattened rice flakes which tastes even better. Today i will be sharing a kesari recipe using red aval which is much more healthier compared to white and taste super good – to me the texture and taste resembled sakkarai pongal. I bookmarked this recipe from Poornima’s cookbook to try, adapted the idea and adjusted the measures to suit our taste. I also skipped the food color as I liked the natural color of the red aval… which gives a nice reddish brown tinge to the kesari.

Ingredients | |
Red Aval / Red Poha (I’ve used thick variety) | 1 cup |
Sugar | 1 &1/2 cup sugar |
Water | 3 cups |
Cardamom | 2 (powdered) |
Cashews (halved) | 10 |
Ghee | 3 tablespoons |
Heat one tablespoon of ghee in a pan and toast the cashews to golden brown and set aside.
In the same pan roast the red aval / rice flakes for 5 minutes over medium low flame until nice aroma comes. Set it aside and let it cool a bit. Once cooled, grind it in a mixer to coarse powder.
Now heat water in a pan. When its about to start boiling.. reduce the flame to low setting and add the powdered Aval and keep stirring to avoid lumps.
Slowly the aval will start to drink up all the water as it cooks. Once it absorbs all the water, add sugar. Again the mixture will turn watery when the sugar melts… let the sugar dissolve well and incorporate with the mixture.
Now the mixture will turn slightly thick, add the toasted cashews, cardamom powder and remaining ghee. Keep stirring till the kesari thickens and leaves the sides of the pan.
Notes
- I’ve used thick Red Aval / Red poha for this recipe which drinks little extra water compared to regular aval. Thin variety may need less water. Adjust according to the thickness of the aval.
- Do not compromise on the ghee, it gives nice flavor and adds in velvety texture to the kesari.
- We at home prefer our kesari slightly sweet and hence added 1.5 cups of sugar, you may cut down 1/4 cup.
- Serves 3-4 adults.
