Add the tomatoes and cook till slightly soft. Then add the drumstick pieces and saute for a minute or two.
Now add turmeric powder, chili powder, coriander powder and salt. Give it a quick stir and add the water.
Bring the flame to medium low and cover the pan with lid. Let it cook for 10 minutes or until the drumstick becomes tender which should be done by then.
Once the drumstick cook, the masala will also thicken a bit. Now add in the coconut paste and fry for few minutes over low flame and switch off. Garnish with coriander leaves and serve as a side rice or roti.
Notes
- This dish taste good when prepared fresh drumsticks, frozen works too.
- Usually this dish is prepared without any garam masala but you can add it if you take it as a side for roti/ chapati.
- Fennel adds in tons of flavor, do not skip it!
- Drumsticks takes a little longer to cook compared to other veggies… and that too matured ones takes longer than usually, try to adjust the cooking time accordingly.
