Chapati & Channa Masala- hands down favorite in our house! This combo suits for lunch box menu too. Make the channa masala ahead of time or the previous night , also knead the chapati dough the previous night and refrigerate. Just heat up the masala and roll out the chapati in the morning and pack it for lunch. (Refer Notes for Tips & Tricks) I packed these for Sid who usually prefers poori over chapati and this time it was mommy’s choice, so here it goes…..

Here is what I packed for Sid’s school lunch…
1. Chapati – Knead the dough the previous night and store it in a air-tight box and refrigerate. The next dough, the first thing in the morning you wake up thaw the dough a little bit to bring it to room temperature. Knead again. Roll them out into chapati and drizzle ghee. 2. Channa Masala – Whether you use soaked channa or store bought canned make the gravy the previous night. Leftovers works great too. We usually have it for previous night dinner and refrigerate the leftovers. Check here for Channa Masala recipe with detailed explanation.
3. Baby Carrots for snacking – Wash them and pat dry with a paper towel.
4. Apple Juice to keep him hydrated – any 100% juice of your choice will work.

Tips & Tricks to pack
The above picture shows chapati & Channa packed in stainless steel tiffin box which ofcourse works great for kids in India. But for us its brutally cold and poor kids have to take cold lunches everyday. So here are few ways to pack chapati/phulkas – Knead the chapati dough real soft (dough should not be very stiff and hard- this will make your chapatis like cardboard) as soon you make them drizzle ghee, let the steam settle a bit and then roll them in aluminum foil while they are still warm. This foil packing will go in thermos lunch box or insulated bag.
Channa masala has to be real thick in consistency to avoid spilling in the container, so make them slightly thick , warm it up in the microwave. Again let the steam settle and then either pack them in a thermos or you may pack in a steel container with air-tight lid which will go in the insulated bag.
