Vangi Bath/Brinjal Rice

This recipe is easy to prepare if u have Vangi Bath Powder

Ingredients-1
5 no Red chillies
1 tsp Coriander seeds
1 tsp Bengal gram
1 tsp Urad dhal
2 no Cinnamon stick
2 clove Clove
1 tsp Coconut gratings
1 tsp Oil
Ingredients-2
1 cup Rice
4 nos Brinjal
1 no Onion
1 tsp Bengal gram
1 tsp Urad dhal
1 tsp Mustard
1 tsp Salt

Instructions

In a kadai put twp teaspoons of oil and fry red chillies, coriander seeds, bengal gram dhal, urad dhal, cinnamon stick and cloves separately. Finally add the coconut gratings and fry well. Cool it. Add salt and grind it to a powder- This is vangi Bath Powder.

Cook rice till soft. Chop the onion finely. Cut brinjal into lengthwise thin slices. 
In a kadai put the ghee and when it is hot add mustard.  
When it pops up, add bengal gram dhal and urad dhal and fry till it turns light brown. Add chopped onion and fry well. 
Add brinjal along with turmeric powder and salt and stir fry till the brinjal is soft. 
Add ground vangi bath powder and stir well.  
Then add cooked rice and mix well. Add lemon juice and once again stir well.  
Garnish with coriander leaves and serve with fried papad or chips.

Notes

You can make vangi bath powder and store it in a refrigirator.

    Hi

    I used to make it the same way, but used to add tamarind pulp and a bit of jaggery and fried copra without onions, will try your way and will let you know.
