Sundal Podi or powder is a dry spice mix which can be used for any sundal preparation or for just any simple vegetable stir fry or curries. They spike up the taste of ordinary sundal / curry to one level up by giving right amount of crunch and heat. This spice mix can stay good for one week and come in handy during navarathri festival when you prepare different types of sundals.

Dry Red Chili | 8 (long variety) |
Coriander seeds /Malli | 2 tablespoon |
Bengal gram / Kadalai paruppu | 1 tablespoon |
Black gram / Ulutham paruppu | 1 tablespoon |
Cumin seeds | 1 teaspoon |
Black peppercorns | 1/2 teaspoon |
Dry roast all the ingredients in a kadai until slightly golden. Make sure to roast these over low medium flame and take care not to burn. Slow roasting ensures even cooking and browning. Once done, let cool completely and grind to coarse powder. Store in an air-tight box for up to a week. Add a few teaspoonful to any sundal variety before serving or sprinkle some on your vegetable curry.
Notes
- Yields little less to a 1/4 cup.
- Salt is not necessary but can be included. Then you have to be careful while cooking the sundal, remember to adjust.
- This spice mix can also be used for dry vegetable curries or stir fries.

This is so cool mullai. The idea of sundal powder seems interesting. I add red chilly powder and dhaniya powder. But rather mixing it up and making it as podi is awesome. Super pa.
