Description
This is a combination of both south and north indian dish.

800 g | Spinach(cleaned & washed) |
200 g | Potatoes(peeled & cut) |
90 g | Grated coconut |
2 T | Coconut oil |
1 tsp | Mustard |
1 tsp | Urad dal |
1 no | Onion – sliced |
12 stks | Curry leaves |
2½ inch | Ginger |
6 nos | Green chillies |
2 tsp | Salt |
3 stks | Coriander leaves |
Instructions
Parboil the potatoes with salt to taste.Drain and keep aside.Heat oil in a pan and season with mustard seeds.When they splutter,add urad dal and stir fry until light brown.Add onions and saute until translucent and glossy.Add ginger and green chillies and stir fry for few seconds.Then add curry leaves and stir well.Add spinach and stir fry till almost dry.Now add the parboiled potatoes and stir fry till done.Add the grated coconut and stir for a minute.Remove from fire and adjust the seasoning if necessary and garnish with corinader leaves.Serve hot.Tastes good with curd/yogurt rice.
