This weeks lunch is simply a stir-fried rice with vegetable and gravy. I didn’t even bother to think, had a very taxing week and my energy level was at the lowest. Just used some leftover basmati rice & veggies from refrigerator, for gravy did hunt the freezer, hehe.. out came the bright green lima beans which went well to compliment the mild stir fried rice. This is not fancy but a simple & tasty combination for a quick decent meal straight from the refrigerator leftovers.

Today morning chopped onion & tomato for gravy and some veggies for fried rice. I had a big bowl of leftover cooked basmati rice so made use of it. If you don’t have then cook the rice in the rice cooker first thing in the morning. Once done spread it on a plate and let it cool completely. Start the onion tomato gravy in a pan get the masala cooking. This is one easy gravy to make, put everything in the pan, cover and cook for 1/2 hour over low flame and once done garnish and finish. Any kind of veggies that you like or have in your fridge will work. I choose to use lima beans for the gravy and it tasted great with this mild fried rice.
Notes
Some short cuts to make this work quickly
1. Add ready made coconut powder/ canned coconut milk for the gravy.
2. Fresh beans takes longer to cook, use frozen beans which will cook fast.
3. Use pre-cut veggies (like cole-slaw mixes) save some time on cutting.
