This is one of those lazy day menus…. I usually make chapatis in bag batches and refrigerate for quick lunch box or for any unanticipated busy day. Today was one of those days… a big laundry to be fixed with million other house chores. Decided to make quick chicken curry, immediatly over to Shasiga’s kitchen searching for a quick chicken recipe and landed on pressure cooker style chicken kuzhambu. Decided to make it and serve along chapti and a quick simple salad.

Chapati – Soft rotis made with Ashirvad whole wheat flour / atta.
Chicken curry – tried this method from Menaga’s blog Sashiga Kitchen. Just added extra tadka with mustard , cumin & little fennel.
Simple salad – fresh carrots sliced, raw onion and few coriander leaves.
This can be a simple lunch or dinner idea and the leftovers can work for lunch box!

Hi Mullai, would you mind sharing how you make and store your big batch of rotis? Do you cook completely or half cook?
Radha, chapati fully cooked is what I store in ziplocs for few days in refrigerator. Reheat a few seconds in microwave. I don’t normally freeze chapati.. no luck so far, they become too hard. Store bought may have some rising agent in it to keep it soft. Thanks
