Today’s menu is very simple, had a lot of cleaning to do at home, skipped the elaborate cooking and fixed a simple dal fry with carrot saute and egg omelette. This weekend though taxing with this & that chorus, had a happy ending with the satisfaction of getting some work done with comforting food. That coconut burfi is a bonus, courtesy from my cousin which gave a sweet finishing touch!
Here is how I prepared today’s meal…
Made Dal tadka with just masoor & moong… which needs about 15 minutes of soaking time. That was the first thing that i did in the morning. Then was getting started with the cleaning work, let my hubby grate the carrot, why not?? Then just a bit of basic chopping assembling onions, tomato and chilies. Decided to pressure cook the dal for couple of whistles (you may also cook over stove top in a sauce pan) If using Toor dal then you may have to pressure cook, I choose moong & masoor which quickly cooks in a covered sauce pan. Make the tadka with ghee and finish it. Simultaneously saute the carrot and finish the poriyal. reserve some of the onion and green chillies sauted and kpt ready for the omelette. Get the rice cooking in the rice cooker and when everyone is ready for meal start making omelettes.

Meal planning is not that easy and mostly depends on what you have in your pantry & refrigerator. This is just an humble attempt to give an idea about the combos that get along well and you may always adjust the menu to suit your needs. Happy Cooking!
