This veggie cream cheese sandwich is a wonderful and healthy meal and is very easy to make. It does not require many ingredients and is very tasty, which is why it is a favorite sandwich at my home. I pack these once a week along with some fresh fruits for Sid’s school lunch and it has become his favorite! You’ll love it too!

Cream cheese | 2 teaspoon |
Whole grain bread | 2 slices |
Lettuce leaf | 2 |
Julienned carrots | few |
Button mushrooms | 2 |
Cucumber | 5 slice |
Red bell pepper | 1 teaspoon (chopped) |
Black pepper | a pinch (fresh peppercorns crushed) |
Method:
Spread both slices of bread with cream cheese. Place the lettuce leaf- cheese side up, then top with rest of the veggies and sprinkle black pepper powder. Now place lettuce again then cover with bread slice cheese side down. Cut into half – wrap in plastic wrap or send it in sandwich ziplock bags. Pack it with choice of fresh fruits, I packed grapes in a ziplock.
Notes:
Yield- 1 whole sandwich
Cream cheese helps to protect the bread from becoming soggy.
Choose veggies of your choice.
Any cream cheese spread will work for this recipe.
Ice pack is not essential for packing this sandwich during cold months.
