| 2 can | Reduced / sodiumfree chicken broth |
| 1 tsp | Grated ginger |
| 1 no | Garlic (chopped) |
| 1 tsp | Red pepper flakes |
| 4 oz | Soba noodles or whole-wheat spaghetti |
| 1 | Boneless,skinless chicken breast halves,thinly sliced crosswise |
| 1 no | Celery stalks,cut into bite size pieces |
| 1 cup | Snow peas,sliced into 1/2 inch on the diagonal |
| 1 T | Fresh lime juice |
| 1 | Scallions,thinly sliced |
| Salt (as per taste) | |
| 2 stks | Coriander leaves (chopped for garnishing) |
Instructions
- In a large saucepan,bring broth,ginger,garlic,red-pepper flakes,and 2 cups of water to boil over high heat.
- Add noodles,lower heat,and simmer until noodles are tender,6 to 8 minutes
- Add chicken[ pre cooked chicken can also be added ],celery stalks ,and snow peas;cook until chicken is opaque throughout,about 1 minute.
- Add lime juice,scallions, parsely and salt to taste.
