Khoya / Mawa, is a dairy product used as a base for making many sweets and gravies. Milk is boiled and reduced to semi- solid state, which looks like a thick sticky mass. Based on the consitency, khoya can be classified into 3 types.
1. Firm Khoya / Bhatti – Milk boiled and reduced to a thick paste and later molded to make it firm, used for burfis.
2. Soft Khoya / Chikna – Milk boiled annd reduced to a sticky paste, used for halwas.
A simple fried rice with the simple mixed fish varai.
A very simple but yummy fish varai, which would not even take 10 mins to prepare. Its very spicy and can be served with warm rice, bread & etc. Also can be used to make fried rice or noodles or as sandwich filling.
Milk sweet – I used cheese instead of milk.

Fish puttu (hash) is a popular dish from Kerala mostly made with Shark and King fish along with scrambled eggs. Its also equally popular in Tamil Nadu too, but made only with sharks. In US, its quite hard to get Shark, so had to adapt with whats available. To my surprise, it turned out great with few varieties like Cod, Tilapia, Tuna and King fish.
