Madurai region in Tamilnadu is known for its popular Vilambu Naidus cooking style who mostly dominate that area. No one can deny drooling over those Madurai Sri Muniyandi Vilas traditional menus…. Naatu Kozhi kuzhambu, Varutha kari, Samba arisi biryani. These items are typical homestyle traditional touch non-veg curries and gravies, served at the vilas which mostly known as a local mess. All these items are prepared with homegrown poultry, fresh veggies, fresh ground masala, tempered with sesame oil and traditonal spices.
Sukka/ Chukka refers to dry stir fries and can be made with either meat or veggie. My favorite choice of meat is chicken and I'm soooooooo addicted to my moms chicken sukka recipe which is a regular at my home on Sundays, if I were to choose sambar as the main course. This recipe is basically smothered with black pepper, fennel and cumin powder and heavily seasoned with curry leaves. Give it try and surprise those hungry taste buds with lip smacking hot masala.
A box of tofu will last only for few days in the refrigerator and I'm under pressure not to repeat the same tofu preparations, so what do you expect out of me??? Adding them to regular curry preparations is what I resort to…. its sooo versatile and adapts well to any dish without spoiling the original flavour. Shrimp curry is one dish which I make at least once a week and adding leftover tofu blocks in the curry helps my family slowly adjust to tofu diet and also incorporate this nutritional powerhouse in a regular meal.

Anchovies are called Nethili in Tamil. These are tini tiny fishes edible both in fresh and dried form. The dried ones are called Nethili Karuvaadu, which I've used for this recipe, coated with masala and pan fried until crisp.
Fresh Anchovies can be found in regular grocery markets under tinned foods packed with salt and preservatives. These can be used for kuzhambu preparations.

Simple fish varuval (shallow fry) with lemony flavour using fresh water Lake Trout. This is just like any other fish varuval and just sharing to let you know that this fish is quite edible in Indian style and taste similar to Salmon. Moreover want to add on all these fish varieties to my recipe database.
The term sukka refers to any dry fry. Here in this recipe goat meat(mutton) is being used with spicy masala powders to make this inviting dry fry. This is our family sunday speciality and most of the time it never makes it to the meal table as they will dig in while its still frying in the kadai.
