Snake Gourd is called Podale in Konkani. Mostly this vegetable is stir-fried like poriyal or used with dal to make kootu varieties. But to my surprise.. one Goan restaurant served them as appetizer in a buffet and that's how I got the idea for this recipe. Well.. those were deep fried with semolina and stuffed with meat. You must have probably had a shot of these if you've already tried any of those Mangalorean style buffets.

Baba Ganoush is a famous Middle- Eastern dish or dip primarily made with roasted mashed eggplants and sesame paste called Tahini. Mostly this is prepared like a thick dip for toasted pita bread and served as an appetizer. This is almost like our Indian Baigan Bharta except includes fresh sesame paste and citrousy lemon juice and few seasonings. As far as the recipe for simple Baba Ghanosh goes, eggplants are fire roasted or grilled , then the pulp is scooped, mashed with Tahini and salt, garnished with lemon juice and fresh parsley.
Green gram is full of proteins. long time i had an idea of trying vadai out of green gram. rececntly i tried it for evening snack it came out really good and tasted yummy. try it out 🙂
Chilli Gobi is an appetizer or starter commonly found in restaurant menus. This is similar to cauliflower manchurian except its extremely spicy, more Indianised. Unlike manchurian this is not a chunky or wet, this is very dry with less saucy stuff.

Pakoda mostly termed as "Pakora" in North Indian Sweet stalls are very rich with loads of ghee and nuts and usually seen with the combination of any leafy or mixed vegetables. This recipe of mine is for one such variety, petty much similar to regular pakoda with few additions.
