Carrot Fry / Poriyal
Ingredients | |

2 nos | Carrots (shredded) |
1 no | Onion (finely chopped) |
2 clove | Garlic (crushed) |
½ cup | Fresh grated coconut |
¼ tsp | Mustard |
¼ tsp | Cumin seeds |
1 no | Dry red chilli |
5 nos | Curry leaves |
1 pinch | Asafoetida powder |
1 pinch | Turmeric powder |
¼ tsp | Salt (or to taste) |
2 tsp | Oil |
Instructions
Heat oil in a shallow pan or iron skillet , splutter mustard, cumin seeds, red chilli and curry leaves. Add a pinch of asafoetida powder and saute the onions and garlic till they turn slightly tender, followed by the shredded carrot, turmeric powder and salt. Fry everything for few seconds and add freshly grated coconut and toss a couple of times and serve.
