Cracked wheat is a wheat product made from whole raw kernels which are crushed or cut into small pieces, which are rich in fiber and other nutrition. It is nothing but Samba Godhumai rava/ lapsi/dalia, a very healthy wheat grain which in general is good for overall health. The most popular Indian way to cook this is make kheer, lapsi, kesari, pongal, upma , pulao or biryani…. it can even be used in salads, soups and wraps.
Now cracked wheat can come in different size and texture… can be termed as Fada, Bulgur, couscous, or cracked wheat… is often determined how they are ground into coarse, medium or fine kernels. Some of the varieties are partially cooked / par boiled but whole cracked wheat is the from whole raw wheat berries and is the most healthy of all.

Broken wheat | 1 cup |
Water | 2 cups |
Cumin seeds | 1 teaspoon |
Onion | 1 cup (chopped) |
Green Chili | 2 small (slit open) |
Ginger garlic paste | 1 teaspoon |
Tomato | 1/2 cup (chopped) |
Mixed vegetables of choice (carrots, beans, green peas, baby potatoes) | 1 cup |
Turmeric powder | 1/2 teaspoon |
Red Chilli powder | 3/4 teaspoon |
Salt | 1 teaspoon (or to taste) |
Oil | 2 tablespoons |
Ghee (optional) | 1 teaspoon |
Coriander leaves | 3 tablespoons (chopped) |
Heat oil in a pressure cooker pan, season with whole garam masalas. Fry the onion till translucent and then add in ginger garlic paste & green chilies, fry till the raw smell goes. Add in chopped tomatoes along with mixed veggies.
Add in turmeric powder, red chilli powder and salt.
Give it quick stir to coat the veggies with the masala.
Add in 2 cups of water. Bring it to a quick boil.
Add the broken wheat.
Give it a stir to blend. Bring the flame to medium heat level. (You may add garam masala powder at this stage- if you opt for)
Cover with the pressure cooker lid and put the weight on. Cook for 1 whistle and switch off.
Once the steam settles, drizzle ghee on top.
Garnish with coriander leaves.
Lightly fluff with fork, gently mix and transfer to a serving dish. It may look mushy once you open the cooker but will turn firm after sometime. Serve hot with Brinjal chops / Ennai kathirikkai and onion raita.

Serves 2-3 adults
Whole garam masala can be substituted with garam masala powder if you wish and can be added just before adding the cracked wheat.
You may follow the same recipe for bulgur or fada.
