Boxed Frozen Spinach is used for this recipe. Just thaw them to room temperature and squeeze out all the water by crushing with your palm and keep them aside. You can also use fresh spinach, wash and chop them finely and proceed. Heat oil in a pan, splutter mustard, cumin seeds, split black gram, dry red chili and curry leaves. Sprinkle asafoetida, add onions and garlic. Fry them till translucent and add chopped tomato and spinach. Sprinkle the turmeric powder and salt. Saute for 5 minutes over medium flame or until it becomes little dry. Switch off and serve as a side for rice.

Will u please let me know the equivalent for frozen spinach . we get fresh spinach in tamil nadu. what quantity should i use. Please tell me in cup measures or handfuls. – swarna
Swarna,
You may need one big bunch about 5- 6 cups of tightly packed chopped spinach. They tend to become very less once you cook them, so use one big bunch which your local street vegetable vendor sells. Thanks.
Thanks Mullai. Tired out for the first time and it came out so well.
Thanks again.
