Broccoli Cream Soup

Broccoli Cream SoupBroccoli Cream Soup, very delicious soup n with plenty of vitamins..can be a starter for lunch r main dish for dinner..made with low fat cream kids will love it.
Ingredients
1 no Onion
1 no Carrot
15 nos Broccoli florets
2 T Raw rice
1 no Vegetable stock cube
½ cup Low fat cream/milk
½ tsp Pepper
½ tsp Parmesan cheese
Salt (as per taste)
1 T Olive oil/butter

Instructions

Brocoli Cream Soup

Wash broccoli and cut into small florets. Wash, peel and roughly slice carrot.grind the raw rice just to make them small pieces dont grind as powder..
Heat the oil in a pan add onion n stir it, then add carrot with the onion n stir it for 5 mintues..now add broccoli n rice pieces n stir them..add vegetable stock as cube with them n add 2 cups of water..let them cook in low heat until carrot n broccoli pieces cook well.

Add the cream with the veggies n just make them boil n put off the stove..cool it.. then puree the soup in a blender..add pepper n salt as per taste.Adjust ur soup as u wish, if u want to be thinner add water before adding the cream.Thinner r thicker, this soup will be a delicious.

Garnish with parmesan cheese , r any other grated cheese n serve hot.


Notes

Parmesan is an Italian cheese which will give a delicate taste to the soup..can also use grated cheddar cheese.

Raw rice can be replace with potatoes also.

Vegetable stock can be replace with vegetable stock water too..

    priya i made this. it came out very well & really taste is delicious we both liked it….why u’ve added raw rice, is it for the stickyness or to enrich the soup? can we add oats instead of rice…but rice potathala antha pisupisupu & taste is good. but i didn’t get the green color as in ur picture…. i left the veggei.. for 1 whisle. i think b’cose of this reason only that green color vanished.thanks for sharing this……

      Hi Viji,

      Thanks a lot, as u told i added rice to give stickyness to the soup, i never tried with oats,give a trial n let me know viji, but can replace the raw rice with potatoes, broccoli can cook very easily, no need to put in pressurecooker, neegha sollura reasone than, pressure cook pannura pothu certain veggies will lose their colour..glad that u liked it..

    Here, we get it from every departmental stores, near to pasta's sections r dehydrated soup section…marks such as knorr,maggi n kallo produce these veggie stock cube..Hope this will help u Deepu n Shan.
