Sprouted Moong Salad is very easy to make in few minutes and can be quite refreshing when enjoyed as a quick mid -day or evening snack. Also, can be enjoyed as a side with any meal or as a starter with a cup of warm soup!

Sprouted Moong Salad – Sprout Salad Recipe
Ingredients
- 1 cup Sprouted Moong (Sprouted Mung bean / Whole Green Gram) use any sprouts of choice
- 1/4 cup Onion chopped
- 1/4 cup Tomato chopped
- 1/4 cup Carrot grated
- 1/4 cup Sweet Mango
- 1 tsp Green Chillies minced
- 1 tbsp Coriander leaves chopped
- 1/4 tsp Salt
- 1/4 tsp Black Pepper Powder
- 1/4 tsp Chaat Masala
- 1 tbsp Lemon Juice
Instructions
- To make this healthy Sprouted Moong Salad, take sprouted mung bean / moong in a bowl.
- If you wish to cook it, then soak the sprouts in boiling water for 3 to 4 minutes. Rinse in cold water, drain and then use it for the salad. Sprouts when cooked will loose some of its crunch feel.
- Add chopped raw onion, tomato, grated carrot, sweet mango ( use any sweet tropical fruit of choice, pineapple or pomegranate works too)
- Add finely minced green chillies, chopped coriander leaves, salt, black pepper powder and some chaat masala. (Use little cumin powder if you can't find chaat masala or replace with little dry mango powder for tang feel)
- Finally drizzle some lemon juice on top and mix well to combine. Toss well!
- Serve immediately or refrigerate for 1 hour and serve chilled!

SPROUTED MOONG PANEER RECIPE – Paneer Recipes
Moong Sprouts can be made in just 2 to 3 days of time. To make sprout whole green gram / whole moong / paasi payaru / pachai paruppu
- Wash thoroughly & soak whole green gram in enough water for 12 to 15 hours.
- Rinse & drain well.
- Cover with a damp paper towel.
- Keep covered in a warm spot, away from direct sunlight.
- Rinse everyday and repeat the process for next few days.
- They should sprout in 2 to 3 days.
- If you prefer long sprouts then repeat the process for few extra days.
- This is a raw version of moong salad. If you prefer to cook then cool a bit after cooking and then make salad.
- Cooked sprouts tend to loose its shape, color & crunch feel.
- Chaat Masala is optional, replace it with dry mango / amchur powder or roasted cumin powder.
- Sweet Tropical fruits acts like natural sweeteners.
- Replace coriander leaves with curly parsley.
