Varagu Arisi payasam / Varagu payasam is made with kodo millet (வரகு). Quick and an healthy kheer for any festive occasion… recipe is adapted from my friend Kurunji’s blog… followed her recipe but used coconut milk instead of regular milk … it was nothing but Yum!
Ingredients
- Varagu Arisi / Koda Millet – 1/4 cup
- Water – 1 & 1/2 cup
- Coconut Milk – 1 cup (thick)
- Salt – 1 pinch
- Jaggery – 1/2 cup
- Cardamom – 1 (crushed)
- Cashew nuts – 6 (broken)
- Dry grapes (raisins) – 4
- Ghee – 1 tablespoon
Lets see how to make this Varagu arisi payasam….
Heat ghee in a heavy bottomed pan, roast cashews and raisins till they turn golden.
Remove that and keep it aside along with the ghee.
In the same pan, roast the varagu arisi in the ghee just to toast a bit. (You need to wash the varagu arisi in water and drain to remove dirt)
Add the water and salt, start cooking it.
Let it come to a vigorous boil, then reduce the flame to medium low.
Cover and cook for 15 minutes…. just like how to cook rice over stove top.
Meanwhile melt the jaggery with little water…
Filter the impurities and pour the melted jaggery to the cooked millet. Add in the powdered cardamom at this stage.
At this stage, reduce the flame to low and add in the thick coconut milk. Stir for few minutes over low flame to thicken to desired consistency.
Add in the roasted cashew and raisins.
Switch off and serve hot.

- Serves 4
- You may add regular milk instead of coconut milk… its just a personal preference.
