Sweet Corn Sundal – Sundal plays a very important role during Navaratri festival which is celebrated for nine days with a different sundal being made each day. Its traditionally made as prasadam/ offering to Gods but can also be prepared on any day as its a very healthy snack.It is normally made with lentils and legumes like chickpeas (garbanzo beans), black channa, mung dal, channa dal, peas, rajma (kidney beans), green gram dal, or peanuts (groundnuts), this one is quite unique and its made with fresh sweet corn. Its easy and takes very little time time to cook, try this for your Navarathri neivedyam!

Ingredients
- Sweet corn kernels 2 cups
- Mustard seeds 1/2 teaspoon
- Cumin seeds 1/4 teaspoon
- Split Black gram / ullundu 1/4 teaspoon
- Red Chili 2 small (tear)
- Asafoetida powder 1/2 teaspoon
- Fresh grated coconut 2 tablespoons
- Salt 1/4 teaspoon or to taste
- Oil 1 teaspoon
- Curry leaves 5 leaves (chopped)
Lets see how to make this Sweet corn sundal…
Steam cook fresh corn kernels in a pressure cooker with little salt and water for upto 2-3 whistles OR microwave the kernels for 4-5 minutes in high power. If using frozen sweet corn then just microwave for a minute in high power. Heat oil in a kadai and splutter mustard seeds, split black gram, cumin seeds, red chili and fresh curry leaves. Let them sizzle, sprinkle the asafoetida powder and then add the cooked corn kernels. Saute for few minutes, check for salt and adjust. Sprinkle the fresh grated coconut and give a quick stir and switch off.
