Instructions
First rule, okra should be dry... so if you wash make sure you dry them on a paper towel completely and then proceed. I usually pick good okra and just clean them with a paper towel. Trim off the top and bottom portion and cut them into slender long pieces as shown.
Combine all the above ingredients in a bowl (turmeric, asafoetida, red chili powder, coriander powder, salt and oil), add the okra pieces and just toss to coat. Spread them over a microwave safe plate(I used Corelle, you can also use a paper plate or paper towel) and microwave for 5 + 1 minutes (this is for 1000 watts). Timings might vary depending on the plate, model, power and capacity. So its always safe to proceed in this order, for 10 okras its 3minutes + 2 minutes + 1 minute. Do not over crowd and always do in batches if making a large portion. Once done, they might look little loose and after cooling completely they will be very crispy and stay that way for couple days or longer if stored in air-tight box.
