Bitter Gourd the most hated veggie is welcomed if made this way. With few ingredients this magic happens… you will see everyone snacking on it!

Bitter Gourd | 3 Large |
Bengal Gram flour | 3 Tablespoons |
Rice Flour | 2 Tablespoons |
Corn flour | 1 Tablespoon |
Red Chili powder | 1 teaspoon |
Turmeric powder | 1/4 teaspoon |
Salt | 3/4 teaspoon |
Curry leaves | 10 leaves |
Water | 2 Tablespoons |
Oil | 3 cups (for deep frying) |
Bitter Gourd found here in USA are super big and very strong. I have used 3 large sized bitter gourds. You may use any size, all we need about 3 cups of sliced gourd.
Wash the gourd and wipe dry with a kitchen towel or paper towel. (make sure they are completely free of any water) Slice them (as shown) into thin discs. Let them dry a bit.. spread them over a kitchen twoel or paper napkin.
Add bengal gram flour, rice flour, corn flour, turmeric powder, chili powder & Salt. Mix to combine. If its too dry sprinkle some water. (Sometimes the veggie may shred some water which should be sufficient for mixing)
The mixture should be semi dry as shown. Add in chopped curry leaves and give a quick toss. Heat oil and start deep frying in small batches. Once you drop they quickly fry with vigorous bubbles. Flip them to brown them evenly. Keep the flame over medium high and fry till they turn golden.
Once done, the bubbles will all subside. Immediately take them out and place them over a paper towel to drain excess oil. Let them cool completely and then store in air tight box for few days. Serve as a side for rice or enjoy as a snack.
Notes
- Makes about 3-4 cups.
- They stay crispy for few days. If your veggie is dry then they turn really crispy and stay longer. Make sure you drain all the water from the veggies. Better after slicing let them rest over a paper or kitchen towel to dry out.
- Baby bitter gourd chips will be out of this world, unfortunately we don’t get here. If you see them do try with those.
